Here it is - Poltava city in the historical center of Kyiv, on Arsenalna Street. During our expedition, it turned out that Poltava is literally one of the most culinary interesting regions of Ukraine. So, our bistro is a manifesto of this. This region is unique and really authentic. Together with the team, we have a big goal to create a modern gastronomical brand — Poltava. It has a great number of canonical dishes - famous meat from Slobozhanshyna, halushki (dumplings), pundyky (small pies), and kvass, as well as modern dishes from the best local products.
We want to show traditional and contemporary flavors to Ukrainians and to the world by combining them together.
Why Poltava?
Modern Poltava region with its absolutely authentic recipes has a really long history. The gastronomic culture of the city and the region has been forming for ages. Back in the early twentieth century, people from there created vegan societies, produced wild types of cheese, kept chain stores of imported alcohol, and treated guests with dishes from Eneida by I. Kotlyarevsky.
What's special about Eneida?
There are hundreds of names of Ukrainian dishes and drinks on hundreds of pages of the legendary poem Eneida. Inspired by the Poltava gastro culture, the heroes of Kotlyarevsky ate and drank only authentic Ukrainian food: lemishka (crispy flatbread), kulish and putrya (types of porridges), kvasha (fruit and kvass dessert), vodka, kissel, syrivets (kvass), etc. Inspired by Kotliarevsky, we want to create our own Eneida - the modern one - with hundreds of new Ukrainian dishes. We want to show every Ukrainian that our kitchen can be stylish, modern, and versatile. It's not just about borscht, dumplings, and lard only. It's so much more. We want to show it! We want people to know about our culture and eat tasty diverse food. Our goal is to cook and feed people so deliciously that everyone smiles with pleasure every time they leave the bistro. We want food to be nutritious and meaningful!
Modern Ukrainian dishes are the heroes of our modern Ukrainian gastronomic poem
